Fiorentina 72″ is designed to offer maximum operational freedom thanks to an extremely articulated cooking surface, available in a gas, induction or mixed configuration.
The Dual Fuel version incorporates twelve brass burners with dual-ring control, allowing precise management of both slow, delicate cooking and the use of large pans, with power up to 17000 BTU (5 kW).
The induction version features multiple high-efficiency cooking zones on a high-resistance glass-ceramic surface, complete with booster function, residual heat indicators and functions for low-temperature cooking, for precise and safe control.
In the combined configuration, gas and induction coexist on the same surface, allowing the most suitable technology to be chosen for each preparation.
Fiorentina 72″ is equipped with two 5,68 cu ft (161 l) multifunction electronic ovens, each with dual ventilation, designed to ensure uniform heat distribution even with heavy loads.
The specification includes chrome telescopic shelves, halogen lighting and large assisted-closing doors, available with or without an inspection window, for smooth and comfortable use. The configuration is completed by the pyrolytic self-cleaning function, Booster and a food temperature probe, for advanced cooking control. During the 869 °F (465 °C) pyrolytic cycle, the external temperature of the doors remains below 122 °F (50 °C), guaranteeing maximum safety.
Fiorentina 72″ is available in the full Officine Gullo colour palette and with all brass finishes, offering a complete level of personalisation. A solution designed to integrate harmoniously into large bespoke kitchens, becoming an iconic and central project element.
