Within the prestigious Collegio alla Querce, part of the Auberge Resorts Collection, Officine Gullo has created an open kitchen that embodies the perfect balance between Florentine craftsmanship, refined design and cutting-edge professional technology.
The project, developed in collaboration with the Arch Florence studio, stems from the desire to breathe new life into the College’s ancient refectory, transforming it into a one-of-a-kind environment in the world of hospitality.
A setting suspended between history and contemporaneity, where the kitchen becomes the beating heart of the gourmet restaurant La Gamella, turning into a true Chef’s Table: a convivial space in which guests can enjoy an immersive gastronomic experience, observing the preparation of dishes up close, talking with the chefs and taking part in engaging culinary masterclasses.

Appliances
The star of the space is a striking 3.8-metre island, equipped with a welded stainless steel sink, induction hob and large worktop framed in burnished brass with a front bar. The lower section integrates refrigerators, drawers and storage compartments, while a majestic “High Pyramid” hood in burnished copper with brass details rises above the island, giving the project a theatrical and iconic character.
